Masala chai

Masala chai or spiced tea made fresh cannot be compared to ready made chai tea bags.  The aroma of the spices is wonderful as you are preparing the tea, and that little bit of effort is well rewarded when you sit down and enjoy the fruits of your labour.  It takes about 12 minutes to make but you do not need to stand over it, so once you get used to the recipe you will be able to knock up a couple of cups in the same time as it takes to boil the kettle and make a cup using a tea bag.

I like to make it with soya milk but it would work well with other milks.

You will need the following to make 2 large cups:-

Masala Chai Recipe

2.5 cups water

6-8 green cardamom pods

5-6 whole black peppercorns

1-2 slices fresh ginger, peeled and diced

1 stick cinnamon, 1-2 inches long, or equivalent quantity of cut cinnamon

3 cloves

2/3 cup soya milk

2 tsp brown sugar

2 tsp black tea (preferably Indian)

Put the water in a saucepan and add the spices, bring to the boil.  Turn down the heat and let it simmer for 5-10 minutes.  Add the milk and the sugar, mixed well to dissolve the sugar and bring to a heavy simmer.  Remove from the heat and add the tea, leave to infuse for 2-3 minutes.  Whisk thoroughly and then strain into cups.  Serve hot.
